Chia Seed Pudding

- 4 Tbsp. Chia seeds
- 270g tin coconut milk (Ayam is a great brand)
- 3 Tbsp. 100% maple syrup
- 2 Tbsp. Cacao powder
- 1 tsp vanilla bean paste
- Mix all dry ingredients together then add in coconut milk and stir until all combined.
- Leave to set in the fridge for 2-3hrs or until firm.
- Serve with fresh berries.
Tip: To make fruit or vanilla variations just remove cacao powder and use 1 tbsp. vanilla bean paste or ¼ cup pureed berries or fruit.
