Chia seed pudding

Ingredients

  • 4 Tbsp. Chia seeds

  • 270g tin coconut milk (Ayam is a great brand)

  • 3 Tbsp. 100% maple syrup

  • 2 Tbsp. Cacao powder

  • 1 tsp vanilla bean paste

Method

  • Mix all dry ingredients together then add in coconut milk and stir until all combined.

  • Leave to set in the fridge for 2-3hrs or until firm.

  • Serve with fresh berries.

  • Tip: To make fruit or vanilla variations just remove cacao powder and use 1 tbsp. vanilla bean paste or ¼ cup pureed berries or fruit.
